  1. Vegetarian Meatballs
    2 cups water
    5 TB soy sauce
    2 TB olive oil
    1 TB honey
    2 tsp. onion powder
    1 tsp. Italian seasoning
    1/2 tsp. cayenne pepper
    1 1/2 cups Oats
    1/2 cup vegeburger
    1/2 cup pecans

    Preheat the oven to 375 degrees. Stir liquids in a pot over medium heat. Add the rest of the ingredients and let sit for 5 minutes. Using a melon ball scoop or small cookie scoop, form balls on a greased cookie baking sheet pan. Bake for 30 minutes.

  2. Sodaless Biscuits

    1 cup warm water
    1 pkg. yeast
    2 cups flour (white)
    1/4 cup oil
    1 TB wheat germ
    1 tsp. salt
    1 cup Whole Wheat flour
    1 tsp. honey

    1. Dissolve yeast and honey in warm water; add 2 cups flour and mix well. Let rise until light
    2. Blend in rest of ingredients. Turn out on board and knead lightly about 10 strokes until smooth
    3. Roll 3/4 inch thick and cut with mason jar or cutter
    4. Bake at 350 degrees until light brown (about 15-20 minutes)

  3. Chicken Enchiladas:
    1 squirt vegetable oil spray
    1 small onion, chopped
    1 teaspoon garlic powder
    11 oz. green salsa ( green enchilada sauce)
    1 can FriChik, shredded
    1 cup monterey jack cheese, shredded (or mexican blend cheese)
    3/4 cup sour cream (fat free or low fat if desired)
    1 small yellow squash, shredded
    1 small can green chilies, diced

    8-10 6-inch corn tortillas
    2 TB. fresh cilantro, chopped

    Preheat over to 400 degrees.

    Spray 10 X 6 casserole dish with vegetable spray. Spread 1/3 of salsa in the bottom of dish. Mix FriChik, 1/2 cup of cheese, sour cream, squash, and green chilies in bowl.

    Heat stack of tortillas about 30 sec. in microwave to soften

    Spread 1/4 cup of mixture onto each tortilla, and roll up. Place seam side down in dish.

    Pour remaining salsa/sauce over the enchiladas, making sure the tortillas are covered well so they won't dry out. Sprinkle with remaining cheese.

    Bake for 20 minutes.

  4. Vegetarian Tlalpeño soup

    6 cup of vegetarian broth/plain water
    1 pack of Morning star chicken strips
    1 large onion slice
    1 large can of diced tomatoes/8 diced tomatoes
    1 bunch of cilantro
    2 tsp of chipotle peppers (canned)
    1 tsp salt
    4 tsp of chick'nish vegetarian seasoning
    1/2 mozarella vegetarian cheese
    toffutti sour cream
    fried mexican chips.
    1 riped large avocado.

    Fry the chicken with salt, and vegatarian seasoning. Add cilantro, onion, tomatoes chipotle,salt, and 6 cups of water, boil for 25 minutes.
    Served with,chips, chesse, sour cream and avocado.
